How to Make Litti Chokha Recipe | Rajma Chawal Recipe?

The Pithi stuffed in it is made from Sattu and it is eaten with Litti brinjal Chokha (Bhurta) or potato Chokha. Mixed veg Chokha and tomato chutney are also made together. So let's start making Litti Choka.

Ingredients for Litti Chokha Recipe:-

For the dough
Wheat flour - 400 grams (4 cups)
Parsley - half a teaspoon
Ghee or oil - half a cup
Eating Soda - 1/3 tsp
Salt - 3/4 tsp

Ingredients for Stuffing:-

Sattu - 200 grams (2 cups)
Ginger - 1-inch long piece
Green Chili - 2-4
Coriander leaves - half cup finely chopped
Cumin seeds - 1 tsp
Mustard Oil - 2 tsp
Pickle Masala - 2 tbsp
Lemon - 1 lemon juice
Black salt - half a teaspoon
Salt

Ingredients for Litti Chokha Recipe

Chokha is traditionally made by adding green Chillies and salt, adding tomatoes, ginger, and coriander leaves, and tastes are even more delicious.

Big brinjals - 400 grams (1 or 2 brinjals)
Tomatoes - 250 grams (4 tomatoes medium size)
Green chili - 2-4 (finely chopped)
Ginger - 1-inch long piece (finely chopped)
Coriander leaves - 2 tbsp (finely chopped)
Salt
Mustard Oil - 1-2 tsp

How to Make Litti Chokha Recipe at Home?

Apply flour to the Litti-:

Sieve the flour and take it out in a pot, add ghee, eating soda, parsley, and salt to the flour and mix it well, knead the soft dough with the help of lukewarm water. Cover the dough and keep it covered for half an hour. Dough for making Litti is ready.

How to make Stuffing for Litti?

Wash, peel, and chop ginger into fine pieces (can also grate). Break the stems of the green chilies, wash and finely chop them. Clean green coriander, wash and finely chop. Take out the Sattu in a vessel, add chopped ginger, green Chillies, coriander, lemon juice, salt, black salt, cumin, mustard oil, and pickle seasoning, if the Pithi looks dry then 4-5 tbsp water Put, The Pithi has to be so wet that it is tied on the Ladoo, mix all the things well, the Sattu is ready.

How to make Litti?

Make a dough of medium size from the dough. With the help of fingers, make the dough larger by 2-3 inches in diameter, make a bowl, put 1 - 1 1/2 teaspoonful of pithy on it and close it by lifting the dough from all sides and make it round. Press it with the palm and flatten it slightly, the Litti is ready to be roasted. Heat the oven, keep the loaded lumps in the oven and bake them till they turn brown. (Traditionally the Litti is seared on the top)

Wash and fry the brinjals and tomatoes, cool them, peel them, keep them in a bowl and mash them with a spoon, add chopped spices and salt, oil and mix well. Brinjal Chokha is ready.

If you like garlic and onion, then peel 5-6 garlic cloves, finely chop and peel one onion, finely chop them, and also mix them in the brinjal.

Ingredients for Rajma Chawal Recipe:-

Rajma ------- 200 grams (one cup)
Salt - little more than 1 tsp (as per taste)
Food soda ------- less than half a teaspoon
Tomato -------- 250 grams (3 -4)
Green Chili ------- 2-3
Ginger ------ 1-inch long piece (one teaspoon paste)
Oil ------- 2-3 tbsp
Asafoetida ------- 1 pinch
Cumin seeds ------- 1/2 tsp
Cumin powder ----------- half teaspoon
Turmeric Powder ------ a quarter teaspoon
Coriander Powder ------ 1 1/2 - 2 tsp
Red Chili Powder ------ a quarter teaspoon
Garam Masala ------ a quarter teaspoon
Lemon ------ 1 if you like
Coriander leaves ------- 2-3 tbsp (finely chopped)

How to Make Rajma Chawal Recipe at Home?

Soak the rajma in water 8-10 hours before.

Wash the soaked rajma and put it in the cooker, add 1 small glass of water, a little less than half a teaspoon of soda and salt according to taste, and close the lid of the cooker and keep the rajma on the gas to cook.

After one whistle in the cooker, reduce the flame, and let it cook for 7-8 minutes on low flame. Turn off the gas Let's prepare the masala till the cooker opens.

Grind tomatoes, green Chillies, and ginger to make a fine paste. Put oil in a pan and heat it. Add asafetida and cumin seeds to the oil.

After the cumin is brown, add turmeric powder, coriander powder, red Chilli powder, cumin powder, and then add tomato paste, fry the spices until oil starts floating on the spices. The masala is roasted and ready. 

If you like eating onions, then finely chop 1 medium onion and do not add asafoetida when oil is hot, just add cumin seeds and brown them and add chopped onions and fry them till they become light brown. Now put all the spices in the above manner and roast them, and make Rajma with the method gave above.

By now the pressure of the cooker is also over. Open the cooker and mix the Rajma in the prepared spices. If you feel that the quantity of water in Rajma is less, then add water as required. After boiling, let the Rajma be cooked for 2-3 minutes. Turn off the gas Mix garam masala, lemon juice, and green coriander in Rajma.

Rajma Chawal Recipe(Red Kidney Beans -Rajma) is ready, take it out in a bowl. Garnish with green coriander. Serve hot rajma with chapatti, naan, and rajma rice looks very good, serve, and eat.
